The new menu of La Riserva Bistrot is not just a list of dishes but an intimate and completely personal culinary vision, articulated according to the Mediterranean Diet, a steady discovery of rituals, symbols and traditions, passed from generation to generation and marked by the rhythm of the seasons. Etna is the inspiring muse and Executive Chef Andrea Macca’s dishes represent its pure and authentic soul, in a gustatory escalation that enhances local products, enriched by an ancient food culture, which has settled in Sicily over the centuries.

From daily fish to Raw beef thin slices with aromatic herbs, peanut cream, tamarind sauce and vegetables crudités seasoned with mint as entreés, including the dessert, which Creamy cube made with L’Ecrù passito wine outstands.

Innovation and tradition also for the first courses with “Ripiddu nivicatu” where the typical spontaneous Sicilian greens cream marries the red prawns of Mazara or fresh pasta with rabbit ragout on a carrot and turmeric cream with a dressing of wild herbs. Also try the main courses, mainly based on meat, where the capocollo of black pig stands out, a tasty joy for the palate.
